]]>The main wine producing regions in the state are North Coast, Central Coast, Central Valley, and South Coast. North Coast’s top wine varieties are Pinot Noir, Chardonnay, and Cabernet Sauvignon. Some of the most significant AVAs in Napa include Howell Mountain, Yountville, or St. Helena, while in Sonoma Alexander Valley, Chalk Hill, or Russian River Valley.
In addition to Napa Valley and Sonoma County within the North Coast, the other wine regions are Mendocino County and Lake County, as well as Los Carneros, which is considered part of both Napa and Sonoma AVAs. While it spans both regions, a large portion of Carneros is classified as a Sonoma County sub-AVA which is a unique occurrence in the area.
Paso Robles is one of the oldest Central Coast wine regions, with a winemaking tradition that dates back to the 1790s. Other well-known areas are Santa Barbara, San Luis Obispo, Livermore Valley, Monterey County, and Santa Cruz Mountains.
Central Valley is home to Sacramento, San Joaquin, and Fresno wine regions. Any agricultural product can be grown here. Eons of erosion from the adjoining mountains deposited rich sediment to create deep topsoil and prime farmland. Along with the great soil, California has a very good climate that allows it to produce more agricultural products than any other place in the U.S. This area is the largest wine-grape growing region, with 70% of California’s grapes coming from its vineyards. You’ve likely enjoyed a wine from this area without knowing it—the wine bottles are known for its simple label “California wine”. It’s home to the largest wine company in the world, E & J Gallo, who produces ____ cases of wine per year across their many brands.
Southern California includes Malibu, Temecula Valley, and San Diego County. Temecula is known for its winery wedding venues, restaurants, and festivals. This region is dry and warm, located just an hour north of San Diego. The close distance to the ocean allows the vineyards to get cool, which makes it great for grape-growing, even though this is a desert territory. Shiraz, Zinfandel and Cabernet Sauvignon are some of the varieties grown in this area.
Harvest season is the time when the fully-developed grapes in the vineyards are ready to be picked. This practice is mostly by hand and often at night, in order to avoid the sun and hot temperatures during the day.
Harvest typically starts as summer comes to an end,-around late August, and can last through October-November. The first grapes harvested are for sparkling wine, to ensure the acidity that winemakers are looking for in this type of wine. The earlier the grapes are picked, the more acidic they will be. On the other hand, the later the grapes are picked, the higher sugar level they will have. These are followed by the white and red fruit, since it takes longer for them to mature. Grape maturity is reached when seeds are able to germinate, which is immediately after veraison, or initiation of fruit ripening.
Once harvest is set to begin, it’s up to the winemaker to determine when the fruit can be brought in. It’s a combination of science and a lot of experience to make the final decision, but there are some telltale signs that indicate when it’s time to get the grapes. The right color of the grapes for one, as they go through different textures and levels of shininess. The seed’s color also helps, since when the grapes ripen, they will have white or green seeds and the stems turn from green to brown. Winemakers also taste the seeds-, if they are un-ripe seeds they will taste bitter. The taste of the grape will be sweet if they are ready, but professionals know if they have the right amount of sweetness. To determine the brix level, they usually use a device called a refractometer to measure the ripeness of individual grapes. Brix measures the sugar levels in the grapes that translate to the amount of alcohol the finished wine will have. Lastly, the feel of the grapes, as individual grapes are usually easier to pull from the stalks.
This year’s harvest in Napa Valley started the earliest on record and is going by faster than normal. Different varieties of fruit are coming in at the same time, which would not normally happen, because of the recent heat wave, which is making harvest 2022 more intense.
Harvest is a fun and great time to visit Napa Valley, and a time to celebrate and taste the last harvest’s wines. The leaves of the vineyards and trees are changing colors and the whole region seems to smell fresh with the aroma of wine. During harvest season, you will find events and parties like Harvest Tidrick Celebration-, in Anderson Valley wine country, happening from October 21st to October 23rd. ]]>Happy World Honey Bee Day! What might seem like a species that should be celebrated every day, we’re excited that there’s a day dedicated to this vital creature. Aside from earning the credit of inspiration for our patented modular WineHive storage system, they are also the beneficiaries of your purchases! Many of you may know that we donate 1% of all retail sales to Washington State University’s Save The Bees program. But let’s explore the reason why we celebrate the bees on the third Saturday of every August!
The first-ever World Honey Bee Day was held in 2009 and dedicated to promoting beekeeping, but in turn, it brought additional awareness to honey bees and the history of harvesting honey. Honey harvesting dates back to 3500 B.C. in ancient Egypt, where it was not only used as a sweetener but as well as a cure for many ailments. Bees were not only used to represent royalty in spoken language and hieroglyphics but they were even worshiped by the Egyptians! Because of the power of honey, the desire to keep bees was sparked and continues through today’s culture.
In the 1920s, cave paintings were discovered in Spain and shed light on the archaic collection practice. Like most ancient practices, beekeeping continued to improve and evolve to what we know today. It was also discovered just how significant bees’ role in pollination is. We all know how vital pollination is to our agriculture industry, so the celebration of honey bees should extend beyond World Honey Bee Day because without them—many fruits, vegetables, and flowers would be extinct.
Fast forward to today and Washington State University’s Honey Bee and Pollinator continued research efforts. Like in a past blog, the honey bee and it’s ingenious honeycomb structure was the inspiration for our modular, modern wine storage system and it only felt appropriate to give back and support the protection of these creatures. As a part of our mission, we’ve pledged to donate 1% of all retail sales to Paul Staments’ efforts to research, educate, and protect honey bees, but for this week, we have decided to double our donation! One of my favorite pairings is Goat Gouda and Syrah. Here in Paso Robles, I like Vivant Fine Cheese and they have a delicious Honey Bee Goat Gouda that's firm and nutty with a touch of sweetness (like me sometimes). I like pairing with Booker's Fracture Syrah, also from Paso and one of the best Syrahs I've ever had. Notes of red cherry and dark chocolate in this rich Syrah pair perfectly for my palate with Vivant's goat gouda.
Another favorite is Blue Cheese and Port. Keeping it local, I like this Big Rock Blue by Central Coast Creamery. It's mild and curdy, with a creamy flavor and hints of salty bacon. PasoPort is one of the only Port makers I've been able to find here on the central coast, and they make this delicious Tawny Port that's aged over 10 years and strong enough to match the pungent flavors of a good blue cheese. It's a bit nutty, as most Tawny Ports are, with subtle notes of hazlenut and even a touch of citrus.
Ron’s Pick:
My favorite cheese is Époisses, one of France's most infamous cheeses, which is a gastronomic masterpiece for anyone who relishes a good stinky, runny cheese interior. Each cheese is covered in an edible reddish-brown coating, and underneath that, a creamy, white interior with a delightfully daunting aroma that comes straight from the farm. I love to pair it with a crisp White Burgundy that’s been slightly chilled.
Ryan’s Picks:
My favorite of all time is Brillat Savarin, triple cream cow milk cheese, with just a touch of honey on toast. Wine-wise, I love to pair sparkling wine or Champagne with it. If I had to choose a brand I would say the Domaine Chandon Tête de Cuvée or Ruinart Blanc de Blanc Champagne. The acidity of the wine cleans the palate and prepares you for the next bite! Excellent afternoon pairing that is a good lead-in to a meal or awesome on its own.
My second favorite is Tête de Moine, cow milk cheese again, which has a nutty flavor and a semi-crumbly texture. It is really good with dried figs and nuts. I love this cheese because it has a tool to cut it that was designed for this cheese—it is literally cut from the top down in a spinning motion. When cut properly, the cheese looks like a flower. The cheese has a very distinct flavor and is great with my favorite varietal, Pinot. I would pair an Oregon wine with it to have more structure and weight. In a dream world, I would drink the Jerusalem Hill Pinot Noir from Domaine Serene or Belles Soeurs from Beaux Freres. Best to have this pairing as a substitute for dessert or an end to a meal.

While it may appear that bees are adept at perfecting precise angles, it’s more simplistic than we think. When bees start constructing honeycombs to store honey, the cells begin as circles. Within seconds the wax cells transform into hexagons, but how? While the bees warm the wax, allowing them to turn it into a lava-like, flowing substance. Once heated—the wax begins to flatten and then cool in place, forming hexagonal-shaped cells that merge to create the full comb.
But why a hexagon? It’s been seen as a joke that bees can do math, but in some scientific studies, it has been confirmed that they can, in fact, do math! Bees aren’t limited to hexagons and could also construct squares or triangles, but as discussed earlier—hexagons are the least wasteful and the most efficient form for the creatures to create. When executing the build of an entire hive, bees opt to make the most of their material and spacing. Other shapes run the risk of wasted, negative space, and we can speak for bees—they don’t like to be wasteful. Hexagons, versus squares and triangles, are the most compact option for the bees’ housing, and it’s “cheaper” than other shapes, with all of the walls being shared with surrounding cells. Beeswax is considered expensive even to bees; each bee has to consume roughly 8 oz of honey to produce just 1 oz of wax! Not only can bees do math, but they can also manage their costs! Hexagons create a sturdy and secure structure for bees to store their prized honey, and protect the collective hive and their young.

Whether you’re a new wine collector or you have a few bottles on hand that you don’t plan on drinking right away, it’s necessary to know how and where to store your unopened wines to ensure they taste their best when you choose to pop the corks. Wine storage doesn’t have to be complicated, but there are definitely a few things you should keep in mind before you stow those bottles. Here are the essentials:
Corked wine should always be stored horizontally, not vertically. This ensures that the wine inside the bottle stays in contact with the cork, keeping it moist. A dry cork lets in more air, which can cause seepage and accelerated aging. While it may be tempting to keep the bottles upright on a shelf or other surface to save space, it’s best not to risk oxygen exposure spoiling the wine prematurely. It’s not essential to store wines with screw cap closures horizontally, though it is certainly an efficient solution, especially if you’re storing other bottles in the same manner.
Perhaps the most important element to consider is temperature. Exposing wine to temperatures either too hot or too cold is a surefire way to spoil it. Generally speaking, 55 degrees Fahrenheit is the ideal temperature for wine storage, but there can be different recommendations for different wines. If you want to know the ideal temperature for a particular wine, it’s best to contact the winery, but if you’re looking for more general, varietal-based recommendations, here is a good article to reference. Regardless of style or label, wine should never be stored at temperatures below 25 degrees Fahrenheit, which can result in freezing, or above 68 degrees which will rapidly accelerate the aging process. It’s best to keep the storage temperature stable. Fluctuations in temperature can cause the cork to expand and contract, resulting in seepage and unwanted airflow.
Humidity of the wine storage area should be kept close to a neutral 70%, if possible. Low humidity can cause corks to dry out, the effects of which we discussed previously, while high humidity can foster mold growth.
The sun’s UV rays and other light sources can, of course, warm the wine unwantedly, but the light itself can also damage the wine’s aromas and flavors. Wine is best kept in a dark area, such as a cabinet or room with solid or UV-resistant doors, but if this isn’t possible, keep the wine inside a box to avoid unnecessary exposure to light.
Choose a storage area that isn’t near sources of vibration (speakers and laundry rooms, for example), and once you’ve chosen the appropriate location, keep the wine there until you’re ready to open it. Unnecessary movement can disturb sediments inside the bottle, which negatively affects the aging process.
